Job Description

Our client, a very high-end resort based in Zanzibar is looking for an experienced Executive Chef to lead their kitchen team. The role is responsible for overseeing the entire culinary operation, ensuring high standards of food quality, presentation, and service. This role includes managing kitchen staff, creating menus, ensuring the kitchen adheres to safety and hygiene standards, and collaborating with other departments to meet the overall business goals. The Executive Chef plays a key role in providing an exceptional dining experience for guests.

Responsibilities
- Designing new recipes, planning menus, and selecting plate presentations.
- Plan and direct food preparation and culinary activities
- Ensure promptness, freshness, and quality of dishes.
- Estimate food requirements and food/labor costs
- Supervise kitchen staff’s activities
- Implement hygiene policies and examine equipment for cleanliness.
- Arrange for equipment purchases and repairs
- Reviewing staffing levels to meet service, operational, and financial objectives
- Recruit and manage kitchen staff
- Perform administrative duties taking stock of food and equipment supplies and doing purchase orders.
- Comply with nutrition and sanitation regulations and safety standards
- Keep kitchen records
- Maintain a positive and professional approach with coworkers and customers
- Set and monitor performance standards for staff.
- Obtain feedback on food and service quality, and handling customer problems and complaints.
- Act as restaurant brand ambassador and always maintain a professional appearance

Requirements
- Diploma/Degree in culinary science or related certificate
- At least 5 years proven working experience as a Head Chef
- Advanced knowledge of food professional principles and practices.
- Proficient knowledge of human resources management.
- Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
- Excellent communication skills.
- Ability to meet deadlines.
- Excellent record of kitchen management
- Ability to spot and resolve problems efficiently
- Capable of delegating multiple tasks
- Communication and leadership skills
- Keep up with cooking trends and best practices
