Job Description
We are launching an exciting new Mexican fusion restaurant in the prestigious Gigiri Court Yard, conveniently located near the US Embassy in Nairobi. Our vision is to bring authentic Mexican flavors with innovative East African twists to create a unique dining experience that celebrates both culinary traditions. We're seeking a passionate and creative Head Chef to lead our kitchen team and help establish our restaurant as Nairobi's premier Mexican fusion destination.
Position Overview
We are looking for an experienced and innovative Head Chef who can blend traditional Mexican cuisine with local Kenyan ingredients and flavors. The ideal candidate will have strong leadership skills, creative culinary vision, and the ability to maintain high standards in a fast-paced environment.
Key Responsibilities
Kitchen Leadership & Management
• Lead, train, and inspire a team of kitchen staff to deliver exceptional culinary experiences
• Design and develop innovative Mexican fusion menus that incorporate local ingredients
• Ensure consistent food quality, presentation, and taste across all dishes
• Manage kitchen operations efficiently while maintaining food safety standards
• Oversee inventory management, ordering, and cost control
• Collaborate with management on menu pricing and profitability targets
Culinary Excellence
• Create authentic Mexican dishes while incorporating creative fusion elements
• Develop seasonal menus that showcase both Mexican traditions and local produce
• Ensure all dishes meet our high standards for taste, presentation, and quality
• Stay current with culinary trends in both Mexican and international cuisine
• Develop signature dishes that will become customer favorites
Team Development
• Recruit, train, and mentor kitchen staff
• Create a positive and professional kitchen culture
• Conduct regular performance evaluations and provide constructive feedback
• Ensure all team members follow health, safety, and hygiene protocols
• Foster creativity and continuous improvement within the team
Required Qualifications
Education & Experience
• Diploma or Certificate in Culinary Arts from a recognized institution
• Minimum 5 years of experience as a Chef, with at least 2 years in a senior/head chef role
• Experience with Mexican cuisine is highly preferred
• Experience in high-volume restaurants or hotels
• Knowledge of fusion cuisine concepts and techniques
Technical Skills
• Expert knowledge of Mexican cooking techniques, ingredients, and traditions
• Strong understanding of food safety, HACCP, and hygiene standards
• Proficiency in menu planning, costing, and kitchen management systems
• Ability to work with local ingredients and adapt international recipes
• Experience with both traditional and modern cooking techniques
